Sponge:
Vanilla
A classic sponge made with butter and flavoured with vanilla extract.
Filled with your favourite jam and vanilla butter icing. Typically this
is the base for novelty cakes and has to be decorated and consumed within
days.
Chocolate
A scrumptious chocolate sponge made with butter and flavoured with your
choice of dark, milk or white chocolate. Filled with your favourite jam
and either a vanilla or chocolate butter icing. Great for children's
and chocoholics parties. Again must be decorated and consumed quickly.
Citrus
A light citrus sponge made with butter and flavoured with fresh orange,
lemon and lime - choose either a single or any combination of flavours.
Filled with lemon curd (or your favourite jam) and a citrus butter icing.
If you want to serve this as your dessert, we could fill it with rich
cream cheese icing.
Orange and Carrot
If you are not too keen on the traditional fruit cake - but want something
a little heartier than a sponge cake, then try this. A slightly spicy
cake filled with orange butter cream. This cake would be ideal to serve
as the dessert for your wedding breakfast.
Other types of Sponge Cake
Please note Sponge wedding cakes are available in the above flavours,
however not all designs are possible with sponge bases. Check with us
- we will always be able to suggest a way to fulfill your dream!
Fruit:
Ideally a rich fruit cake needs to be made 6 months before the event; this gives
the cake time to mature, this ensures that the flavours and textures reach
their peak! Of course we can make fruit cakes on shorter timescales - but the
longer the better!
Traditional Dark Fruit Cake
A dark fruit cake made with the best dried fruits and plump cherries steeped
in brandy or whisky with butter, dark treacle, dark soft brown sugar, flavoured
with fresh oranges and more brandy or whisky. Once made the cake is kept in a
cool place and regularly drizzled with either brandy or whisky. This produces
a well rounded rich moist fruit cake that slices well and tastes wonderful. It
is a good base for all wedding cakes and if you wanted to keep the top tier to
become the traditional christening cake - then this is the cake we would strongly
recommend. For your piece of mind the traditional fruit cake can be collected
or delivered several days in advance of your celebration. (If you are not keen
on alcohol we can miss it out and steep your fruit in fresh orange juice).
Dietary needs
If you have any special dietary needs, with your help we will aim to meet them.
e.g. Gluten free, Fat Free, Egg intolerance.
Toppings:
Marzipan Marzipan is traditionally
used to cover fruit cakes before icing. To make a sponge
cake extra special it can be marzipaned too. Marzipan
is made from ground almonds.
Sugar Paste / Fondant Icing This a very
popular form of icing made with icing sugar and gelatin. It is soft icing that
can be used to cover cakes and is used to make molded characters and flowers.
The possibilities of what can be made with sugar paste are endless. This icing
can be coloured to match wedding outfits, flowers or party invitations.
Cocoform A delicious chocolate paste
(white, milk and dark) made from pure Belgian chocolate and
glucose. It is not as sweet as sugar paste and can be used
to cover cakes or to make figures and flowers. It can also
be mixed with marzipan to make a mouth watering chocolate
marzipan. Chocolate marzipan is particularly suited for use
on chocolate wedding cakes.
Royal Icing A past tradition was
to use royal icing to cover wedding cakes. Each tier of the
cake would have several layers of royal icing to achieve
a hard flawless finish onto which more intricate deigns were
iced. Cherry on the Top can do this for you. Royal icing
is now more commonly used to write messages and to add details
to sugar pasted cakes and novelty cakes. It is made from
icing sugar and pasteurised egg white.
Butter Icing Butter icing is made
with butter and icing sugar, they are beaten together with
vanilla extract or a flavouring of your choice. It is used
as a filling for sponge cakes.
Chocolate Real chocolate icing is
luxuriously rich. There are many ways of making it. Depending
on how chocolately you want your cake to be we can choose
one to match your needs.
